Avocado - Stuffed with Shrimp

This appetizer is really astonishing. It may seem like a lot of work, but it is well worth the effort. The blending of mashed avocado and peas combined with shrimps and garnishes makes an intriguing combination of flavours that is unusual and delicious.

3 big avocados
1 lemon
1 head lettuce
1 cup cooked black-eyed peas,

seasoned lightly with salt
6 springs of parsley or watercress
2 - 3 tomatoes
6 tsp. sour cream
2 tsp. chopped onions
2 hard-boiled eggs
500 g cooked shrimps, seasoned lightly with salt ( without shell )



Avocado - Stuffed with Shrimp

Mash 3 big avocados ( peeled ) in a bowl, with 5 tbs. lemon juice and 5 tbs. sour cream. Shred 1 head lettuce and place in a bowl. For individual serving, place 1 cup shredded lettuce on a salad plate. Arrange 3 to 4 tsp. black-eyed peas, seasoned lightly with salt, in center of lettuce. Cover peas with 3 to 4 tbs. avocado mixture. Cut 2 slices tomatoes, arrange at one side of avocado and top with onions. Place 2 quarters hard-boiled eggs, one each at opposite sides and put some of the shrimps in a row on top of avocado. Garnish with 1 or 2 springs parsley or watercress.
