Chenam - Fish Croquettes

3 Eggs lightly beaten
1 tsp. salt
1 pinch saffron
1 Tbs. curry
1 tsp. crushed chilli pepper
1 pinch cumin seed (optional)
1 cup. Bread crumbs
1 lemon
50 g butter or margarine
600 - 800 g fish (halibut, or any mud fish)

Cook the fish with very little water, add the salt and the fish is tender, take it off the fire and let it cool down. Take the skin of the fish off, mash coarsely the fish until its flaky. Add the eggs, curry, cumin, pepper, saffron, 3 to 4 tsp. of bread crumbs and mix it together with the fish. Form into small croquettes. Spread the rest of the bread crumbs out on a small tray, press the crumbs into the croquettes on all sides and chill in refrigerator for 1 to 2 hour Fry the croquettes in butter or margarine until golden brown on all sides.
Serve garnish with lemon slices.
