Ghanaian snack pie



Ghanaian snack pie


20 ml olive oil
300 g minced lamb, corned beef or minced beef

( vegetarians with cheese )
1 finely cut onion
1 tsp oregano
3 middle size fresh tomatoes
1 tsp salt
1 fresh green pepper
tsp curry


1 dl lukewarm water
15 ml baking powder
30 g melted margarine
2 eggs
1 tsp salt
800 - 1000 g all purpose flour



Heat the oil in a pot, add the meat, salt, onions and cook it for about 5 - 8 minutes at middle temperature. Add the oregano, tomatoes, pepper, curry and leek. Let it cook for about 10 minutes, take it off and let it cool down. Put half of the water in bowl; add baking powder, melted margarine, eggs, salt, flour and mix with your fingers, gradually adding water to make dough. Knead the dough until smooth and not sticky when a finger is pushed into it. Add more flour if necessary. Leave it in a warm place for about 15 minutes. Cut the dough in small portions and roll out the dough to about 20cm x 20cm quadrats on a floured board. Fill half of the dough with the lamb pastete and fold it to a triangle. Press the edges of the dough tightly with a fork and cut excess off. Repeat the process until the dough and filling is finished. Put the filled dough on a baking pan and baste it with beaten egg. Bake it for about 20 - 25 at 200 degrees. Serve warm.
