Ginger Beer



Ginger Beer - A refreshing drink


800 g ginger
4 big, fresh pineapples
1 tablespoon yeast
5 cups of molasses
6 - 7 litres of water
100 g of sugar (optional)




Cut the ginger into small cubes, put it in a blender, add a little bit of water and blend it. Wash the pineapples and cut it in chunks, it's not necessary to peel the pineapples. Put the pineapples and the blended ginger in a big pot, boil the water and pour it over the mixture. Allow it to cool down to lukewarm. Dissolve the yeast in a cup of lukewarm water, pour it over the mixture and stir it. Cover the mixture and allow it to stand overnight. Add the molasses the next day stir it and strain it into bottles. Close the bottles tightly and refrigerate.
Serves cool in glasses.
