Karkolo - Plantain, corn and peanuts pancake


1 - 2 very ripe plantains ( peeled )
2 - 3 fresh corn cobs
150 g roasted peanuts ( without skin )
3 spring onions cut in small pieces
1 medium size peeled ginger
1 clove garlic ( optional )
1 tsp cumin
2 eggs
100 g all purpose flour
200 ml groundnut oil


Remove the corn from the cob and blend it with the plantains, peanuts, spring onions, ginger, garlic and cumin in a blender. Put the mixture in a pot, add the eggs, flour, mix it and let it stand for about 3 minutes. Heat the oil in a frying pan at a middle temperature. Take a spoonful from the mixture, put it in the heated oil and press it flat with the spoon. Continue the process until the frying pan is full. Fry until it's golden brown on both sides. Drain the fried karkolo on a kitchen paper. Serve warm as snack.
