Mamas Gray Sauce



Mamas Gravy sauce - served throughout Africa (Vegetarian)


400-600 g chopped tomatoes
6 big onions
50 ml vegetable oil, or palm oil
1 tsp. salt
2 big green pepper
1 Tbs. coarse pepper
1 tsp. curry
1/2 nutmeg
3-4 bay leaves

Slice the onions and the green pepper (thin slices). Heat the oil in a saucepan until it's hazy. Add the sliced onions, and stir it for about 5-8 minutes. Add the green pepper, salt, coarse pepper, and stir for about 4 minutes. Add then the curry, and stir for about 4 minutes. Add the chopped tomatoes, grate the nutmeg and add it to the sauce. Serve with: plantain, rice, yam, cassava, banku, gari, kenkey, cocoyam, sweet potatoes, potatoes, etc.
