Yam Balls



Yam Balls - A very popular snack in Africa

300 g chopped meat
600 g yam
1-2 finely chopped onions
2-3 medium size fresh tomatoes,

 finely chopped without seeds
3 ml fresh basil, chopped
1 medium size clove of crushed garlic
2 eggs, beaten
1/2 litres oil, for frying
Seasoned flour for dusting the balls
1 tbs. salt
1 1/2 tbs. fresh crushed black pepper
Salad leaves to serve with



Steam the meat with a quarter finely chopped onions, salt and a 1/2 tsp. fresh crushed pepper, for about ten minutes. Peel the yam , and boil it with salt for about half an hour. Drain it, and mash it. Add onions, pepper, tomatoes, basil, garlic, and the beaten eggs and mix it. Make small balls out of the mixture. Heat the oil until it's hazy. Roll the balls in the seasoned flour, and fry them for a few minutes (Not too many at the time), until its golden brown. Drain the balls on a kitchen paper. Garnish on a salad leave, and serve it.
